Cooking with GADDS'

Trota in Cartoccio con GADDS'

This works best with a delicate pale ale, such as GADDS' Number 3.


Stuff a seasoned Isle of Thanet trout with chopped shallots, a generous handful of parsley, a few Taggiasche olives and a lone bay leaf. Place it on a piece of lightly oiled baking paper, form a boat, drizzle with a light olive oil and drench in GADDS' Number 3. Wrap it all up and bake for 20 minutes. The delicate flavour of the fish is much enhanced by the light citrus nature of the beer.
